Ingredients:

  • 3 cups cubed cooked chicken
  • 1 cup salsa ( I mixed green salsa and chunky red salsa)
  • 1 can (4 oz) chopped green chilis
  • 10 (8 in) flour tortillas
  • 2 1/2 cups whipping cream
  • 2 cups (8 oz) Monterey Jack cheese shredded
  • 1 cup (4 oz) Cheddar Cheese shredded

Directions:
Combine chicken, salsa and green chilies. Fill each tortilla with a portion of the chicken mixture. Roll up and place, seam-side down in a sprayed 13×9 inch baking dish. Pour cream over top. Sprinkle evenly with both cheeses. Bake at 350* for 45 minutes or until golden and most of the cream is absorbed. Makes 6 servings.

These were amazing!

I could have eaten the whole dish!

No, this is not a weekly meme.
It’s just a random post that ended up here today.
Because there are a lot of things that have been bothering me lately.
And since I can’t seem to write about anything else, today you will have to suffer a list of things I hate.
And it just happens to be Thursday.

I hate that coffee tastes so damn good but makes me pee non-stop for hours.
I hate it when people don’t put the new roll of toilet paper on the holder.
I hate that companies have 3rd shift. No one should have to work from 10p-6a because it really makes it difficult for me to sleep and nothing should be allowed to disrupt my life like that!
That eating healthy doesn’t taste anywhere near as good as eating unhealthy. I mean seriously, if I could perfect a healthy Big Mac at home, I totally would instead of consuming the bazillion calories and fat grams that McDonald’s delivers via a drive thru window for $4!

So, that’s all that really comes to mind right now.
Who knows, I may add to it throughout the day.

Things I Hate Thursday

Last Thursday I had to take the Tatertot in to the ER.
He was running a fever of 103.8 (rectally) and vomiting on top of an awful cough.
After some meds at the hospital, he was feeling much better.
